THE CHRONO-OVEN — FIVE-SECOND BAKE
Conventional ovens heat air, cooking from the outside in. The MK-05 eliminates thermal conduction entirely, depositing energy directly into the molecular structure of the food.
Stage 1: Ohmic Heating (T+0.0–2.0s)
High-voltage current passes directly through the batter. The batter itself is the resistor. Temperature jumps from 70°F to 200°F everywhere at once.
Stage 2: Vacuum Flash Expansion (T+0.5–2.5s)
As the ohmic heating spikes temperature, chamber pressure drops in a controlled flash. The water flashes to steam, creating pressure-controlled foam — the starch matrix locks around expanding bubbles in milliseconds. The vacuum flash mechanism is the same phase-change physics that powers the Phase Flash Oasis Platform at industrial desalination scale.
Stage 3: High-Intensity IR Laser Array (T+3.0–5.0s)
VCSEL laser arrays deliver millisecond-pulsed bursts of photonic energy to the top 1 mm of the cake surface for uniform Maillard browning without interior thermal damage.
T+1.0s Batter hits 205°F internally.
T+2.0s Vacuum dump. Cake expands 300%.
T+3.0s Laser Pulse Alpha. Surface water evaporated.
T+4.0s Laser Pulse Beta. 350°F surface browning.
T+5.0s LN2 cooling blast. Ding.
