ROTARY TRI-ZONE ARCHITECTURE
A rotary table moves the dish between three distinct environmental worlds within the chassis:
ZONE 1
The Forge
Up to 500°C (surface only; bulk food temperature controlled independently). Plasma searing at 12,000°C jet with 2 mm focal spot, induction coils, superheated steam.
ZONE 2
The Void
Down to −196°C. LN2 atomisers, vacuum pumps, anti-griddle.
ZONE 3
The Loom
Ambient/controlled. 12-axis nozzle array for structural printing.
Protocol A: Tonkotsu Ramen
Broth (Forge): Collagen/fat paste receives superheated water at 120°C, emulsifying into creamy Tonkotsu. Noodles (Loom): Low-hydration alkaline dough extruded directly into boiling liquid. Chashu (Forge): Protein/fat matrix hit with 3 seconds of plasma torch.
Protocol B: Nitrogen Strawberry
Cream (Void): Custard mist sprayed through LN2 vapour — texture smoother than any churned ice cream. Fruit (Loom): Geometric honeycomb of strawberry gel. Meringue (Forge): Flash-baked with IR lasers, placed as a hot crisp shard onto cold cream.
